Delicious Persian Meatball Recipe: Rice Koofteh
Ingredients:
- 2 cups rice
- 500g ground beef
- 1 large grated onion
- 1 tsp saffron (soaked)
- 1 egg
- 2 tbsp chickpea flour
- Salt, pepper, cinnamon, and turmeric to taste
- Oil for frying
- 3-4 tomatoes (for sauce)
- 2 tbsp tomato paste
Instructions:
- Parboil the rice, then strain.
- Mix beef, onion, egg, chickpea flour, spices, and saffron. Shape into balls.
- Fry meatballs, set aside.
- Prepare sauce with tomatoes, paste, and seasoning; simmer with meatballs for 20-30 mins.
- Serve with rice.
