Delicious Persian Meatball Recipe: Rice Koofteh

Ingredients:

  • 2 cups rice
  • 500g ground beef
  • 1 large grated onion
  • 1 tsp saffron (soaked)
  • 1 egg
  • 2 tbsp chickpea flour
  • Salt, pepper, cinnamon, and turmeric to taste
  • Oil for frying
  • 3-4 tomatoes (for sauce)
  • 2 tbsp tomato paste

Instructions:

  1. Parboil the rice, then strain.
  2. Mix beef, onion, egg, chickpea flour, spices, and saffron. Shape into balls.
  3. Fry meatballs, set aside.
  4. Prepare sauce with tomatoes, paste, and seasoning; simmer with meatballs for 20-30 mins.
  5. Serve with rice.
