Ratatouille Recipe 🍆🌶️


Ingredients:

  • Eggplant: 2 medium
  • Zucchini: 2 medium
  • Red bell pepper: 1
  • Yellow bell pepper: 1
  • Tomatoes: 4 medium
  • Onion: 1 large
  • Garlic: 2 cloves
  • Olive oil: As needed
  • Salt, black pepper, thyme: To taste
  • Bay leaf: 1
  • Fresh basil (optional): For garnish

Steps:

  1. Prepare the Vegetables:
    • Slice the eggplants, zucchinis, bell peppers, and tomatoes into thin, 0.5 cm (¼ inch) slices.
    • Slice the onion into rings and finely chop the garlic.
  2. Sauté Onion and Garlic:
    • Heat olive oil in a large pan over medium heat.
    • Add the onions and garlic and sauté until softened and golden.
  3. Add Tomatoes and Spices:
    • Add half of the sliced tomatoes to the pan with the onion and garlic mixture. Cook for about 5 minutes.
    • Stir in the bay leaf, thyme, salt, and black pepper. Mix well.
  4. Layer the Vegetables:
    • Spread the tomato-onion mixture evenly on the bottom of an ovenproof dish.
    • Arrange the eggplant, zucchini, bell peppers, and remaining tomato slices in alternating layers on top (e.g., eggplant, zucchini, bell pepper, tomato).
  5. Drizzle and Bake:
    • Drizzle olive oil over the layered vegetables and season with salt and pepper.
    • Cover the dish with aluminum foil and bake in a preheated oven at 180°C (350°F) for 30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes until the vegetables are tender and slightly golden.
  6. Garnish and Serve:
    • Remove the Ratatouille from the oven and garnish with fresh basil leaves if desired.
    • Serve hot as a main dish or a side dish with bread or rice.
